Easiest Vanilla cake in the world with milk chocolate frosting – Microwave oven and Gas top (No oven) recipe


Happy friendship day to one & all!

I fall in that group which believes everyday should be friendship day..and I am blessed with beautiful friends in my life.
I have this urge to ramble about my friends & name each one of them here…But I will stop myself now!Instead to make this day special for one & all. I made a simple cake with whatever I had in store & fridge, which I admit wasn’t impressive at all. How often do you have one of these days?

Thus I made

The easiest Cake with the easiest frosting in the world
~ Two ways!

One. In a microwave oven.
Two. In a pressure cooker or any let out container.
Here is a sneak peak!

Let’s get started….

Easiest Cake in the world with milk chocolate frosting

Ingredients :
-Refined flour, 2 big cups
-salted butter, 1 big cup
-Castor Sugar, to taste and to balance the salt (I like mine subtle. So I used 4 tablespoon of castor sugar)* scroll down for tip
-eggs, 2 big eggs/ 3 small eggs
-vanilla extract, to taste (I used 4 big drops) (Optional – Even without this, it tastes great!)
-Dry fruits of your choice (I used Almonds, cashew nuts and bits of walnuts), finely sliced
-baking powder, 1 teaspoon
-milk, 1 big cup
Any milk chocolate
I used a few Dairy Milk Chocolates

Method :
The batter
Take a cake tin or any aluminium bowl of your choiced size.
Grease it and keep it aside.

In a bowl “Cream” butter & sugar.
Creaming is a technical term of mixing room temperature butter with castor sugar, till it becomes fluffy and smooth.
When its done, add the vanilla extract, milk and whip well.
Add the eggs ONE BY ONE – whip well after adding each one.

In a bowl mix all the dry ingredients – flour, baking powder, salt.
Now mix the wet ingredients in the dry bowl.
Whip well and add the dry fruits in.
Keep a few dry fruits aside to put on top of the batter in cake tin later.
Shift batter to the greased cake tin or bowl. Put a few dry fruits on top.

Baking
One : Microwave Oven
Pre-heat the oven to 180 degree convection mode.
Put in the bowl on the short grill rack. Bake for 20-25 minutes.
Voila!
Take out & cool. Carefully shift it on a tray or plate.

Two : On Gas top in a pressure cooker
You need
an aluminium or steel bowl that fits in the pressure cooker,
Pressure cooker,
A grill or rack or metal ring or anything to prevent the bowl touching the cooker bottom. Check one out Here!

Pre-heating the cooker. By REMOVING the whistle attachment on top for 2 minutes.
Carefully open the lid and put the grill/rack and then on top place the bowl/cake tin.
Keep the gas on high for 5 minutes. Then on low for 15-20 minutes.

In both cases,you can check by opening the lid or oven door and inserting a toothpick. If it comes out clean, its baked well.
Also, check the browning of the cake suface.

For frosting
Double boiler is used to melt chocolate. Find out how here!
Double boiler means melting the chocolate on a bowl by the heat of the steam from the water below.

Place a bowl with water in it. Place another bowl or non-stick pan on top. Add few drops of oil or one small spoon butter along with the chocolate. Keep stirring them to melt & prevent burning 🙂

Grate some chocolate.
Put both liquid chocolate & grated chocolate on the cooled cake.

Tip :
☆If you dont have castor sugar, grind normal sugar in the mixer grinder.

☆Salted butter has salt content that gives the cake a balanced taste. If you use unsalted butter, you may use a pinch of salt too.

☆If you dont have Vanilla extract, you can skip. Trust me! It tastes just as good.
