Shahi Soya Chunks(My family’s gravy based meal maker recipe)


In a comtemplating mood, I was going through the older posts I have done so far and I realised that I mostly have non-vegetarian protein meals. I was surprised how I dint include my family’s loved gravy based nutrella soya chunks recipe!
So the first thing I did was ask my mother if we have the needed ingredients handy & got started..sounds quick right?

Soya nuggets or chunks also known as meal maker or nutrella noodles to many are great source of protein for vegetarians..its very versatile too. I do a lot of dishes with it.. be it cutlets, side dishes, curries or even marinated fried ones tastes great! 🙂

I made my family’s Shahi soya chunks as a side dish with shahi pulao ( a rice dish that is very versatile).
Isnt the flavourful gravy based soya chunks tempting??
Its soft and the gravy is thick & delicious..
The best part is the flavours are so balanced..not once does any ingredient overpower other..its perfectly synchronised!


Shahi Soya Chunks - My family's loved recipe

Its easily done in a pressure cooker, you could do it in a wok with a lid too. Infact, if you are bold enough you could make it in a rice cooker too! Yes!

Ingredients :
– Soya Chunks/nuggets, 3 cups
– Coconut, 2 tablespoon
– Fennel seeds, 1 teaspoon
– Onion, 1+1 medium size
– Tomato, 2 medium size
– pepper corns, 4-5 or to taste
– Milk, 2-3 tablespoon
-Cumin/Jeera seeds, 1/2-1 teaspoon
– Ginger-garlic paste, 1 tablespoon
– Kashmiri chilli powder, to taste
– Coriander powder, 2 teaspoon
– Garam masala powder,1 teaspoon
– salt, to taste
– sugar, a pinch
– water, as needed
– lemon juice, 1-2 drops
– oil, 1+ 3 tablespoon
– You could add lil coriander leaves when in season. I dont recommend dried herbs.

Method :
¤ Firstly, boil water and add the milk in. Immerse the soya nuggets in them completely. Keep aside for at least 15 minutes or till you are done preparing.

¤ In a pan/wok take 1 tablespoon oil & sauté 1 medium size chopped onion & both the tomatoes.
When cooked, grind the following
~ Coconut
~Pepper corns
~fennel seeds
~ Cooked onion & tomatoes

¤ Take 3 tablespoon of oil in pressure cooker , add cumin seeds & let them crackle away. Add 1 chopped onion, ginger-garlic paste, cook for a minute. Add the ground paste (above) and sauté for a few minutes.

¤ Add chilli powder, coriander powder, garam masala powder and cook well for 2-3 minutes.

¤ Add salt and pinch of sugar. Stir well.

¤ Add soya chunks and mix well.
Add about 2-3 cups of water and mix again. Pressure cook on medium & then low flame for 5-10 minutes or till cooked well.

¤ Add drops on lemon.juice and put of gas. Serve hot with bread of any kind or rice dish.

Tips & notes :
☆ Make sure the the water+ milk is hot enough. Immerse the soya chunks completely.
Keep stirring them once in a while when the float up.

☆If you dont have garam masaa powder, grind or paste 1″ cinnamon stick, 2 smal cardamoms, 2 cloves, 1 small mace. You may use little bit of nutmeg too.

    Roy,
    I am always looking for ways to use the soya chunks and granules and this is a great recipe! I like the fact that it can be all cooked together in a pressure cooker.
