I am quite excited about this post. The sole reason being, this is my first ever stir fry post + a twist to go with it.
I dedicate this to all those passionate wok(kadai) lovers and lovely cooks. This new group I am member of on facebook is super cool.
There’s so much I learn everyday, so much inspiration,the passion & practice is unbelievably great!

Now to food, the main love. Stir fry is much loved in my family, especially my parents. They enjoy a good seasoned stir fry with almost every dish.
But that’s not it.
What do you do when you have leftover mashed potatoes?
Do you have them bland just like that??
I make a family favourite stir fry! With crispy balls of mashed potato. Its simple, quick, fresh, healthier (especially if you own an air-frier or oven), tasty & flavourful! What more do you need, eh?
Please note, Mashed potato in my world is not the one with butter, milk/milk solids or extra starch.
We call it aloo bhaaté and is boiled potatoes,peeled and mashed with little oil,salt & green chillies to taste.
Both kinds of mashed potato work fine for my recipe.

vegetable Stir Fry with a twist ~ Leftover mashed potato crispy balls
♡ Leftover mashed potato (or freshly made mashed potato) , 1 cup or 1 small bowl
♡ Refined flour /Corn starch (gluten-Free), 2-3 tablespoon (to form a solid balls of potatoes)
♡ Garlic, 2 + 3 , chopped/grated
♡ Black Onion seeds/Kalaunji/Kalo jeera, 1 teaspoon
♡ Green chillies, 2-3 chopped or to taste
♡ Oil, for frying the potato balls & stir fry
♡ Salt,to taste
♡ Sugar, 1-2 teaspoon or to taste
♡ black pepper, to taste
♡ Onion, 1 big, chopped
♡ Carrot, 1/2 cup, grated or finely chopped
♡ Capsicum, 1/2 Cup, chopped
♡ Cumin seeds, 1 teaspoon
♡ Black mustard seeds, 1 teaspoon
♡ Sliced onion, 1/2 of one small, garnish (optional)
♡ Tomato ketchup , 2 tablespoon
♡ Good quality white Vinegar, 1 teaspoon* scroll down
♡ Take the leftover mashed potato, add flour( wheat/ corn etc.) And mix well to give it a ball forming consistency. Add 2-3 finely chopped/grated garlic, onion seeds, salt, black pepper to taste.
♡ Wet your hands and form small balls of the mixture. Keep aside on a greased plate.
♡ Deep fry/ shallow Fry/ bake or air-fry them to get crispy balls of seasoned potatoes.
( Air frier isone wise investment!)
♡ In your favourite wok (Kadai), heat the oil of your choice.
Add the cumin seeds and mustard seeds. Cover with a lid to avoid the crazy crackling of the seeds in hot oil.
(I use my Alluminium alloy Kadai(wok) and Rice bran oil. It took about 8-10 seconds)** see tip
♡ Add the garlic, then onion, carrot, capsicum, green chillies. Stir fry them well.
Add salt, sugar now – salt releases water which fastens cooking and sugar helps get good colour.
♡ When done (I like mine crispier), put the vinegar & tomato ketchup. It now deserves a good stir!
♡Add the potato balls now. Mix well to coat each one of them. Turn off the gas/stove.
♡ Serve with a sprinkling of sliced onions. Best with any flat breat or even with some flavoured rice.
Tips & Notes :
☆ Let the oil heat well in the wok, before adding in the seeds & vegetables.
☆ Healthier version tastes just as good so, airfrying in an Air-fryer or baking gives the same result.
I shallow fried them into brown balls of yumminess.
☆ Make sure the cumin & mustard seeds dont get burnt. It leaves a bitter aftertaste and aroma when over cooked!
☆ Swapping the ingredients like onion seeds or tomato ketchup with ingredients of your choice will work just fine.
☆ If you dont have or use vinegar, use lemon juice instead. Carefully though!
